Melt the chocolate in a bain-marie.
Add the Gomasio, Tahini, Yuzu and Rice Syrup. Meanwhile, whisk the aquafaba like egg white until stiff. Carefully mix the chocolate mixture with the whipped aquafaba and divide between four glasses. Finish the mousses with Gomasio, pistachios and a red fruits.
200 ml aquafaba (chickpea liquid)
140 g dark chocolate
1 tbsp Lima Gomasio
1 tbsp Lima Rice Syrup
1 tsp Lima Yuzu Pepper Paste
2 tbsp Lima Tahini
a few pistachios and red fruits for decoration
