Lima's Shiro miso is a young short aged fermented soy paste with a mild, almost sweet taste (with around 3 weeks fermentation).

Miso is used like a bouillon cube in all kinds of dishes to enhance their taste : in soups, sauces, bread spreads, vegetable dishes, vinaigrettes, etc. It is sufficient to mix a small quantity with your dish to enjoy its umami flavour.
