Soba 35%
Our Soba 35% noodles are made with a mix of wholegrain wheat flour and wholegrain buckwheat flour (35%). The grain is ground several times, making the flour so fine that the pasta has a very soft consistency despite being made from whole meal grain. The dough is then kneaded for a long time, slowly rolled out in thin layers and cut into strips without compressing the dough. These strips are dried for at least 48 hours in a ventilated room without artificial heating to preserve the quality.

After cooking, Soba noodles can be served warm and cold and are a perfect addition to soups, spicy sauces, sautéed vegetables, and fresh salads. There is no need to add salt to the cooking water, as the Soba noodles already contain salt.
